Vegan Cream of Mushroom Soup

Ingredients

  • A bunch of mushrooms
  • A bag of baked cashew nuts
  • Half a white onion
  • Ground Black Pepper
  • Dried parsley
  • Vegetable stock either a dried cube or broth
  • Olive oil
  • Garlic powder
  • Dried herb blend

Tools

  • A pot
  • A blender
  • Fire

Steps

  1. Chop all the mushrooms into small pieces
  2. Chop the onion into small-ish chunks
  3. Finely blend the cashews with water until semi-creamy, should be liquid-y
  4. Fry onions in olive oil until caramelized
  5. Add mushrooms and cook until mushrooms are mushy(?)
  6. Add vegetable stock
  7. Add blended cashew mix
  8. Add garlic powder, dried herb blend, ground black pepper and dried parsley
  9. Simmer until creamy
  10. Garnish with more dried parsley and serve!
